Great information! Don't engage government, just my opinion. I have tried to get a couple local people to start a mobile butchering service. Set up a trailer, go right to the ranch, butcher, quarter on sight, have a cooler in the trailer to age and then cut it up for them, as long as they weren't using any of the beef for resale, just personal use, no inspection is needed. Just a thought.
